Creamy Red Potato Salad

Creamy Red Potato Salad is a great recipe to serve at Easter dinner or to take on a picnic. The Dijon mustard gives it an added burst of flavor. Using Newman’s Own Olive Oil and Vinegar Salad Dressing as well as Duke’s Mayonnaise make this recipe sugar free (yes, most salad dressings and mayonnaise contain sugar!).

Ingredients
  1. 6 medium-sized red potatoes
  2. 1/3 cup olive oil & vinegar salad dressing
  3. 1/2 cup mayonnaise
  4. 1 Tablespoon Dijon mustard
  5. a couple drop of liquid stevia or 1 teaspoon of sweetener
  6. 3 hard boiled eggs
  7. 6 green onions
Instructions
  1. Cut potatoes into 1 inch chunks then place in a pan of water. Boil for 8 minutes or just until tender. Drain the potatoes then rinse with cold water. Place the potatoes in a large bowl.
  2. While potatoes are boiling chop eggs and onions.
  3. Mix salad dressing, mayonnaise, Dijon mustard and stevia in a small bowl.
  4. Add the eggs, onions to the potatoes and stir to mix. Add the liquid ingredients and stir until everything is well combined.
  5. Refrigerate the potato salad to give the flavors time to meld together.

Mexican Skillet Chicken

Mexican Skillet Chicken is a quick and easy recipe for a weeknight meal. It has great flavor yet doesn’t require a lot of effort. Top the chicken with avocado or guacamole and serve it with Mexican rice. Give it a try for your Cinco de Mayo celebration!

Mexican Skillet Chicken

With my food sensitivity to dairy, I eat my chicken without cheese. I’ve also recently been diagnosed with a slight sensitivity to onions and was told by my doctor to cut back on those as well. It is just as delicious served without cheese or extra onions. So if you are trying to cut back on calories, you can definitely eliminate the cheese in this recipe!

Ingredients
  1. 3 boneless chicken breasts
  2. 1 small jar chunky salsa
  3. 1 onion
  4. finely shredded fiesta cheese
  5. cooking oil
  6. salt and pepper to taste
Instructions
  1. Slice each chicken breast to create 2 thin breasts.
  2. Place chicken in a bowl or ziploc bag then add jar of salsa. Make sure all the chicken pieces are covered with salsa. Let marinate in the refrigerator for several hours or overnight.
  3. When ready to cook, slice onion into thin slices.
  4. Heat about 2 tablespoons of oil in a skillet over medium high heat.
  5. Add chicken breast to heated pan and cook for 3-5 minutes on each side or until browned.
  6. Remove chicken from skillet.
  7. Add onions to skillet and cook until soft and browned (about 5 minutes).
  8. Return chicken to skillet and top with cooked onions and shredded cheese.
  9. Turn heat to low.
  10. Cover skillet with lid and cook for about 5 minutes more or until cheese is melted.
  11. Add salt and pepper if desired.

S'mores Brownie Bites

You don’t need a campfire to make these Easy S’mores Brownie Bites! And these are a lot less messy than traditional s’mores. Due to the fact they are made with graham cracker crumbs, a boxed brownie mix and miniature marshmallows this recipe comes together rather quickly. And if you don’t have any graham cracker crumbs you can crush sheets of graham crackers. Check out this great ingredient equivalents chart from The Spruce.

Ingredients
  1. 1 1/2 cups graham cracker crumbs
  2. 6 Tablespoons melted butter
  3. 1 boxed brownie mix (along with ingredients listed on box)
  4. 1 cup miniature marshmallows
Instructions
  1. Line 13" x 9" pan with foil.
  2. Pour graham cracker crumbs in bottom of the pan then pour melted butter over the crumbs. Mix
  3. well and press down onto bottom of pan. Put in the refrigerator for about 30 minutes to set.
  4. Heat oven to 350.
  5. Make brownie mix according to directions on the box then add the marshmallows. Spread brownie mix on top of the cooled graham crackers.
  6. Bake for about 30 minutes or until the top looks shiny and set.

Free May Planner Stickers

Gluten and Sugar Free Blueberry Pie

Blueberry pie is and always has been one of my favorite pies. Since I don’t eat gluten or refined sugar I had to come up with a new recipe. This Gluten Free Sugar Free Blueberry Pie is actually a healthier alternative to the traditional pie. The crust is made with almond flour and a few tablespoons of coconut oil. Almond flour is low in carbohydrates and high in fiber and protein. For other health benefits of almond flour check out this post by Dr. Josh Axe. Also, instead of refined sugar, the blueberries are sweetened with Stevia. Of course you can use any sweetener of choice! So if you are looking for a healthier option for your Easter menu, this pie fits the bill! Enjoy!


 
For the crust
  1. 1 1/2 cups almond flour
  2. 4 Tablespoons coconut oil or butter
  3. 3 Tablespoons Splenda
For the filling
  1. 4 cups blueberries
  2. dash of salt
  3. 1 cup water
  4. 1 teaspoon liquid stevia (or 1 cup other sweetener)
  5. 1 1/2 Tablespoons cornstarch
For the crust
  1. Preheat oven to 350. While oven is heating put oil or butter in 8" or 9" pie pan and put in oven to melt.
  2. Remove pie pan from oven once oil has melted. Add almond flour and Splenda to the oil. Mix well then press mixture up sides and onto bottom of pan.
  3. Bake for 12 minutes.
For the filling
  1. While crust is cooking, put 1 cup of berries, water and stevia in a pan. Bring to a boil and cook 2-3 minutes. Mash some of the berries in the pan while they are cooking.
  2. Whisk in cornstarch until completely dissolved. Cook for several minutes or until slightly thickened.
  3. Add in the rest of the berries and stir until well coated.
  4. Pour into cooked pie crust then chill for several hours in the refrigerator.

Blackberry Cobbler

Blackberry Cobbler


This blackberry cobbler smelled so delicious as it was baking.  It’s a great fourth of July dessert!  It was made from the blackberries that I picked from Blakelock’s Berry Farm in Grangerland Texas. Although the berry season is coming to an end, there were still plenty of berries to be picked.  I picked about 3 pounds in no time at all. I’m looking forward to going back next year!
 Although they are not certified organic (due to the required paperwork and registration), these berries are grown without pesticides or herbicides. If you live in the Spring or Conroe Texas area I would recommend visiting this farm!
 This is a recipe for a cake-type cobbler where the batter goes in the pan before the berries. It produces a nice crispy topping with gooey filling.   Note to my friends:  this is not gluten or sugar free!

Blackberry Cobbler

Ingredients:

Serves 6 – 8
3 cups blackberries
¾- 1 cup of sugar (depending on how sweet your berries are)
1 cup flour
2 teaspoons baking powder
½ teaspoon salt
1 cup milk
½ cup (1 stick) butter, melted
2 tablespoons brown sugar
½ teaspoon cinnamon

Directions:

1. Preheat the oven to 375°.  Lightly grease your pan. I used a 7″ x 10″ pan.  You could use and 8″ x 8″ or a 9″ x 9″.
2. Mix the blackberries with sugar in a medium size bowl and set aside.
3. Mix flour, baking powder and salt.
4.  Stir in the milk and mix until smooth.
5.  Add the melted butter and stir until well blended.
6.  Pour the batter into the prepared pan.
7.  Mix the blackberries and sugar with a spoon then spread evenly over the batter.
8. Mix the brown sugar and cinnamon in a small bowl.  Sprinkle on top of blackberry batter.
9. Bake in the oven for 45 minutes or until lightly browned.
10. Let cool 10-15 minutes before serving.

June Planner Stickers

This is the last week of school for our school district – yay! I’m not sure who is happier on the last day of school – us teachers or our students! The relaxing pace of summer is definitely welcomed around here!  I know that I don’t use my planner as much in the summer but these June Planner Stickers remind me of everything summer should be – sipping on lemonade and sweet tea, eating popsicles and just generally enjoying life!
